Raju Gari Kodi Pulao Recipe – Restaurant Style Andhra Chicken Pulao

Ingredients:

1 lb chicken cut into small pieces

2 cups Basmati rice

1/2 cup peas

1/2 green bell pepper, diced

1 onion, diced

1 tbsp ghee or oil

2 tsp cumin seeds

2 cloves garlic, minced

Salt to taste

For the masala:

5-6 fresh cardamom pods, crushed (optional)

10-12 black peppercorns

5-6 cloves

3 cinnamon sticks

4-5 star anise pods

Instructions: 1. In a medium pan, add the chicken and cook for 5-7 minutes until it is tender. Add enough water to cover the chicken and let it cook until all the liquid is evaporated. 2. While the chicken is cooking, rinse and soak the rice in warm water for 30 minutes. 3. In a large pan or wok, heat the ghee or oil until hot. Add the cumin seeds and let them crackle. Add the chopped onions and green bell pepper and cook until they are browned on both sides. 4. Add the crushed cardamom pods (if using), black peppercorns, cloves, cinnamon sticks, and star anise pods and sauté for additional 1-2 minutes. 5. Add the cooked chicken along with drained rice and let everything cook together for 5 minutes until heated through. 6. Season with salt to taste and serve warm.
