The combination of crispy methi vada and a thick and vibrant green chutney is a perfect appetizer or snack. Growers often use these two ingredients as a mix-and-match to create their own recipes. However, there are a few basics that are essential for any recipe including: choosing the right dosages, mixing it well, and letting the ingredients sit for about 30 minutes before serving.
For crispy methi vada, you will need:
-1 cup besan chickpea flour (besan kichadi)
-2 tablespoons green Chilly chilly powder
-1 teaspoon caromix flavoured dry spice
-1/2 teaspoon cumin seeds (jeera)
-1/4 cup grated onion
Whenever you have these four ingredients together, they form something that resembles roti. To make them into vadas, simply mix all of the ingredients together until they form a dough. Once the dough is ready, shape it into small rounds and deep fry them in hot oil at 375 degrees Fahrenheit. Once they are cooked through, the methi vada will be a golden brown color and utterly crispy! Green chilly chutney can be made with similar ingredients but swapping some of the spices for different flavors such as mint or tamarind. In this recipe, it is served alongside warm naan bread. Enjoy!
