Ingredients:

1 cup ripe buttermilk or yogurt

2 tablespoons ghee or clarified butter

1 small onion, finely chopped

1 green chili, finely chopped

1 teaspoon cumin seeds

1/4 teaspoon turmeric powder

Fresh coriander leaves (optional)

Salt to taste

1/2 cup all-purpose flour or maida flour (for making thin crust)

Oil for deep frying

For tempering: cayenne pepper, salt, red chili powder, garam masala

Method:

1. In a pan, heat ghee or butter. Add the chopped onions and green chili and cook until both are soft. Add the cumin seeds and fry for a minute.add the turmeric powder and fry for another minute. Add the buttermilk or yogurt and cook until the ingredients are well combined and heated through. Remove from heat and add fresh coriander leaves if desired. Allow to cool completely before serving. For making thin crusts, combine 1/2 cup flour with enough water to make a soft dough. Knead well until smooth then shape into desired shapes and deep fry in hot oil until golden brown.Temperature guide: 350 degrees F (175 degrees C).

2. Serve dahi wada warm with some chutney or pickles on the side for dipping. Enjoy!
