Who is Koriroti?
Koriroti is Mangalore-based chef and restaurateur who is famous for his southern Indian chicken curry style. Born in 1965, he has a degree in hotel management from the Wesleyan University of Mysore, followed by an apprenticeship with a French chef. He started his own restaurant in 1994, with the aim of showcasing Mangalorean cuisine.
How does Koriroti make his chicken curry?
The chicken curry style that Koriroti prepares is typically made with white onions, ginger, garlic, coriander leaves, cardamom pods, black pepper pods, dried red chillies, turmeric and salt. He also uses a lot of coconut milk to give the dish its distinctive flavour and richness.
Can I make this at home?
You can easily prepare a similar version of this chicken curry style at home by following Koriroti’s recipe or using a similar recipe. Just be sure to adjust the spices to your taste and use traditional South Indian ingredients like white onions, ginger, garlic, coriander leaves, cardamom pods, black pepper pods, and dried red chillies instead of coconut milk.
