Ingredients:
4 pounds paneer (softened)
3 tablespoons ghee or clarified butter
1 teaspoon cumin seeds
1 small onion, finely chopped
2 green cardamom pods, crushed slightly to release their flavor
1 cinnamon stick
1 bay leaf
2 teaspoons salt or to taste
3/4 cup milk or unsalted butter chicken broth
Directions:
1. In a large pan, heat the ghee or butter over medium heat until melted. Add the cumin seeds and cook for 1 minute. Add the onion and cook until softened, about 5 minutes.
2. Add the cardamom pods, cinnamon stick, bay leaf, and salt and cook for 1 more minute. Pour in the milk or chicken broth and bring to a low boil. Reduce the heat to low and simmer until thickened, about 45 minutes. Discard the bay leaf and cardamom pods before serving.
